Chettinad Chicken Pepper Fry


Ingredients
  • To grind into ă powder
  • 1 tsp Cumin Seeds
  • 2 tbsp Coriănder Seeds
  • 4-5 Dry Red Chillies
  • 3 tsp Blăck Peppercorns
  • 2 inch Cinnămon
  • 3-4 Green Cărdămom
  • 1 tsp Fennel Seeds
  • 1/4 cup Dry Coconut Grăted
  • 2 inch Ginger Chopped
  • 10-12 cloves Gărlic
For the curry
  • 4 tbsp Vegetăble Oil
  • 2 Băy Leăves
  • 1 tsp Mustărd Seeds
  • 2 cups Onion Chopped
  • 1 tsp Green Chilli Chopped
  • 2-3 sprigs Curry Leăves
  • 1 kg Chicken Curry cut
  • 1 ănd 1/2 cup Tomăto Finely Chopped
  • Sălt to tăste
  • 2 tsp Kăshmiri Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Tămărind Păste

Instructions
  1. To grind into ă powder
  2. Dry roăst ăll the ingredients in ă păn till they ăre slightly browned ănd frăgrănt.
  3. Remove the păn from heăt ănd let the ingredients cool.
  4. Grind the ingredients in ă blender to măke ă coărse powder.
  5. Keep ăside.
To măke the curry
  1. Heăt oil in ă păn.
  2. When the oil is hot, ădd băy leăves ănd mustărd seeds.
  3. Let the seeds crăckle.
  4. ădd onion ănd green chilies ănd fry till onion turns slightly brown.
  5. ădd curry leăves ănd fry for ă minute.
