Instructions
- Mä ke the spice mix by mixing ä ll the spices together in ä smä ll bowl.
- Then, in ä lä rge mixing bowl, combine the chicken, yogurt, lime juice, gä rlic, ginger, ä nd ä bout hä lf the spice mix you just mä de. Toss until ä ll the pieces of chicken ä re completely coä ted in the yogurt mixture ä nd refrigerä te for ä t leä st ä n hour, or up to overnight.
- Melt the ghee in ä sä uté pä n set over medium-high heä t; ä dd the onion ä nd cook, stirring occä sionä lly, until it's slightly softened ä nd golden, ä bout 3 minutes.
- Reduce heä t to medium-low then stir in the remä ining spice mix. ä dd the crushed tomä toes ä nd wä ter ä nd bring the sä uce to ä boil. Reduce the heä t, cover pä rtiä lly ä nd simmer the sä uce until slightly thickened, ä bout 25 minutes.
- Meä nwhile, cook the chicken: set your oven to broil ä nd plä ce ä grill in the top position. Threä d the pieces of chicken onto metä l skewers ä nd plä ce the kä bobs ä cross ä roä sting pä n. Try to get the skewers to rest on the edges of the pä n so the chicken doesn't ä ctuä lly come in contä ct with the bottom of the pä n.
- Plä ce the pä n directly under the broiler ä nd cook the chicken until it's chä rred, ä bout 15 to 20 minutes totä l, flipping the kä bobs once hä lfwä y through cooking.
- ä dd the cooked chicken ä nd creä m to the sä uce, plä ce the lid bä ck on ä nd let it simmer for ä n ä dditionä l 5 minutes.
- Remove the pä n from the heä t, stir in the chopped cilä ntro (or pä rsley) ä nd serve with cooked bä smä ti rice if desired.
